Ingredients
  

  • 500 g lean ground beef mince
  • 1 large onion finely chopped
  • 2 cloves of garlic crushed
  • 1 red bell pepper deseeded and diced
  • 1 to 2 fresh red chillies finely chopped
  • 1 tablespoon vegetable oil
  • 1 teaspoon hot chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon tomato purée
  • 400 g can chopped tomatoes
  • 300 ml beef stock
  • 400 g can kidney beans drained and rinsed
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper

Instructions
 

Sauté the Vegetables

  • Heat the oil in your large saucepan over medium heat. Add the onions, garlic, and peppers and cook until they are soft and slightly golden.

Brown the Beef

  • Add the ground beef to the pan. Break it up with your wooden spoon and cook until it is browned all over and no pink remains.

Add the Spices

  • Stir in the chili powder, cumin, coriander, and fresh chillies. Cook for two minutes to let the spices release their amazing aromas into the meat.

Mix in Tomato Purée

  • Add the tomato purée to the pan. Stir it well into the meat and vegetable mixture for about one minute to deepen the color.

Pour in Liquids

  • Add the chopped tomatoes and the beef stock. Use your spoon to scrape any flavorful brown bits off the bottom of the saucepan.

Season and Simmer

  • Stir in the dried oregano, salt, and black pepper. Bring the mixture to a gentle boil, then turn the heat down to a low simmer.

The Slow Cook

  • Cover the pan with a lid. Let it simmer gently for about 45 minutes to allow all the spices to blend together perfectly.

Add the Beans

  • Stir in the drained kidney beans. Let the chilli cook for another 15 minutes without the lid to thicken the sauce slightly.
