Ingredients
  

  • 8 chicken thighs bone-in skin-on
  • 2 tbsp olive oil
  • 2 onions sliced
  • 3 garlic cloves crushed
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp turmeric
  • 400 g chopped tomatoes
  • 200 g dried apricots halved
  • 400 ml chicken stock
  • 2 tbsp honey
  • Handful fresh coriander chopped
  • Salt and pepper to taste

Instructions
 

Brown the Chicken

  • Heat oil in tagine. Brown chicken thighs 5 mins each side. Set aside.

Cook the Onions

  • Add onions to same pot. Fry gently 8 mins until golden and soft.

Add the Spices

  • Stir in garlic, cumin, coriander, cinnamon, turmeric. Cook 2 mins fragrant.

Add Tomatoes

  • Tip in chopped tomatoes. Stir well. Cook 3 mins to thicken slightly.

Return Chicken

  • Place browned chicken back in pot. Coat with spicy tomato mix.

Add Apricots and Stock

  • Scatter apricots around. Pour in stock and honey. Season well.

Simmer Slowly

  • Bring to simmer. Cover. Cook low heat 45 mins until tender.

Finish and Serve

  • Stir in fresh coriander. Taste. Adjust seasoning. Serve hot.

Notes

  • Use skin-on thighs for flavor and crispiness.
  • Soak apricots if too dry.
  • Add preserved lemons for authentic zing.
  • Swap chicken for lamb chunks.
  • Milder version: Reduce spices by half.
