Ingredients
  

  • 500 g Chicken Breast cut into small strips.
  • 8 small Corn or Wholewheat Tortillas.
  • 1 large Onion finely chopped.
  • 2 Red Bell Peppers sliced thin.
  • 2 cloves of Garlic crushed.
  • 1 can 400g Chopped Tomatoes.
  • 1 tablespoon Tomato Purée.
  • 1 teaspoon Chili Powder.
  • 1 teaspoon Ground Cumin.
  • 1 teaspoon Dried Oregano.
  • 100 g Reduced-fat Cheddar Cheese grated.
  • 1 small bunch of Fresh Cilantro.
  • Salt and black pepper to taste.
  • 1 tablespoon Olive Oil.

Instructions
 

Sauté the Vegetables

  • Heat the olive oil in your large pan over medium heat. Add the chopped onions and sliced bell peppers. Cook them for about 5 minutes until they are soft.

Brown the Chicken

  • Add the chicken strips to the pan with the vegetables. Stir-fry them until the meat is no longer pink on the outside. This locks in the juices.

Add the Spices

  • Stir in the garlic, chili powder, cumin, and dried oregano. Cook for one minute to release the flavors. Your kitchen will start to smell wonderful and spicy.

Simmer the Filling

  • Pour in the tomato purée and half of the chopped tomatoes. Let the mixture simmer gently for 10 minutes. The sauce should thicken and coat the chicken.

Prepare the Sauce

  • Take the remaining chopped tomatoes and blend them until smooth. Season this with a little salt and pepper. This will be the topping for your enchiladas.

Fill the Tortillas

  • Lay a tortilla flat and spoon some chicken mixture into the center. Roll it up tightly like a cigar. Repeat this for all eight tortillas.

Arrange in the Dish

  • Place the rolled tortillas side-by-side in your baking dish. Ensure the "seam" side is facing down. This keeps them from opening up while they bake.

Top and Bake

  • Pour the blended tomato sauce over the top of the tortillas. Sprinkle the grated cheese evenly over everything. Bake at 200°C for about 15 to 20 minutes.
