Ingredients
  

  • 500 g chicken breast diced
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 2 carrots sliced
  • 150 g frozen peas
  • 2 garlic cloves minced
  • 400 ml chicken stock
  • 2 tbsp plain flour
  • 100 ml single cream
  • 1 tsp dried thyme
  • Salt and pepper to taste200g self-raising flour
  • 1 tsp baking powder
  • 75 g butter cold and cubed
  • 150 ml milk
  • 50 g cheddar cheese grated
  • 1 tbsp fresh parsley chopped

Instructions
 

Prep the Chicken and Veggies

  • Dice the chicken into bite-sized pieces. Chop onion and slice carrots thin. Mince garlic. Heat olive oil in a large pan over medium heat. Add chicken. Cook for 5 minutes until golden. Stir often. This builds great flavor fast.

Cook the Filling Base

  • Add onion, carrots, and garlic to the pan. Cook for 4 minutes until soft. Sprinkle in flour. Stir well for 1 minute. Pour in chicken stock slowly. Bring to a simmer. Add peas and thyme. Season with salt and pepper. Let it bubble for 5 minutes. It thickens nicely now.

Add Cream and Transfer

  • Stir in single cream. Simmer for 2 more minutes. Taste and adjust seasoning. Pour the mixture into an ovenproof dish. Smooth the top. Set aside while you make the topping. This filling smells so inviting already!

Make the Cobbler Topping

  • In a mixing bowl, sift self-raising flour and baking powder. Rub in cold butter with your fingers until it looks like breadcrumbs. Mix in grated cheese and parsley. Add milk gradually. Stir to form a soft dough. Do not overmix.

Shape and Add Topping

  • Flour your hands lightly. Scoop dough into 8-10 small balls. Place them on top of the chicken filling. Press gently. They will spread as they bake. Brush tops with a little milk for golden shine.

Bake Until Golden

  • Preheat oven to 200°C (180°C fan). Bake for 20-25 minutes. Cobblers should rise and turn golden brown. Filling bubbles around edges. Remove from oven. Let it rest 5 minutes. Serve hot and steaming.

Notes

  • Use chicken thighs for juicier meat. They stay tender.
  • Add a pinch of mustard powder to filling for extra zing.
  • Make it veggie: Swap chicken for mushrooms and lentils.
  • For spice lovers, stir in 1 tsp paprika or chili flakes.
  • Freeze unbaked cobbler. Bake from frozen, add 10 mins.
  • Grate cheese finely for even melt in topping.
  • Leftover cooked chicken works great. Saves time!
