  • 1 sheet puff pastry
  • 1 egg for egg wash

Instructions
 

Prepare the Chicken

  • Cut chicken into bite-sized pieces. Season with salt and pepper. Heat oil in a pan and cook chicken until lightly golden. Remove and set aside.

Cook the Leeks

  • In the same pan, add butter. Cook sliced leeks slowly until soft. Stir often so they do not burn. Leeks should become tender and slightly sweet.

Make the Sauce Base

  • Add flour to the leeks and stir well. Cook for one minute. This helps thicken the sauce later and removes the raw flour taste.

Add Liquids

  • Slowly pour in chicken stock and milk. Stir continuously to avoid lumps. Cook until the sauce becomes smooth and slightly thick.

Add Chicken and Seasoning

  • Return cooked chicken to the pan. Add thyme, salt and pepper. Mix well so all flavors combine. Let it simmer for a few minutes.

Prepare the Pie Dish

  • Pour the filling into a baking dish. Spread it evenly. Let it cool slightly before adding pastry on top.

Add the Pastry

  • Roll out puff pastry and place it over the filling. Press edges gently to seal. Cut small slits on top for steam to escape.

Egg Wash and Bake

  • Brush the pastry with beaten egg. Bake at 200°C for 30–35 minutes. The top should be golden and crispy.
