Ingredients
  

  • 2 1/2 cups 300g all-purpose flour
  • 1/2 cup 115g cold butter, cubed
  • 1/2 cup 115g lard or shortening
  • 1 egg yolk
  • 3-4 tbsp cold water
  • Pinch of salt6 medium apples Granny Smith or Bramley, peeled and sliced
  • 1/2 cup 100g brown sugar
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 tbsp butter dots

Instructions
 

Make the Pastry Dough

  • Mix flour and salt in bowl. Rub in cold butter and lard until crumbly. Add egg yolk and water. Knead gently into ball. Wrap and chill 30 mins. This prevents tough pastry. Takes 10 minutes total.

Prepare Apple Filling

  • Toss sliced apples with sugar, cinnamon, nutmeg, cornstarch and lemon juice. Let sit 10 mins. Juices draw out nicely. Taste and adjust spice. Set aside for pie assembly.

Roll Bottom Crust

  • Preheat oven to 375°F (190°C). Roll half dough on floured surface. Fit into pie dish. Trim edges. Prick base with fork. Chill 10 mins. Adds crisp bottom crust.

Fill and Top Pie

  • Add apple filling to crust. Dot with butter. Roll remaining dough for top. Cover pie. Seal edges with fork. Cut steam slits. Brush with egg wash.

Bake to Golden Perfection

  • Bake 20 mins on lower rack. Then 25 mins higher rack until golden. Cool 20 mins before slicing. Juices set properly. Your pie is ready!

  • Room temp: Covered up to 2 days.
  • Fridge: 4 days in airtight tin.
  • Freezer: Whole pie 3 months—thaw overnight.
