  • 4 mahi-mahi fillets about 6 ounces each

  • ½ teaspoon onion powder
  • ½ teaspoon salt

Prepare the Mahi-Mahi

  • Pat the mahi-mahi fillets dry with paper towels. Removing extra moisture helps the fish brown nicely. Check the fillets for bones and remove any you find with clean kitchen tweezers.

Make the Seasoning

  • Add olive oil, lemon juice, garlic, paprika, oregano, onion powder, salt, and pepper to a small bowl. Whisk everything together until the mixture looks smooth and evenly combined.

Season the Fish

  • Place the mahi-mahi fillets on a clean plate. Brush both sides generously with the lemon-garlic mixture. Let the fish rest for about five minutes before grilling.

Preheat the Grill

  • Preheat your grill to medium-high heat. Clean the grill grates carefully, then lightly oil them. A hot, clean grill helps prevent the delicate fish from sticking during cooking.

Grill the First Side

  • Place the mahi-mahi fillets directly on the hot grill. Cook for about four to five minutes without moving them. This helps create attractive grill marks and a lightly browned surface.

Flip and Finish Cooking

  • Carefully flip each fillet using a fish spatula or wide tongs. Brush with melted butter, then grill for another four to five minutes. Cook until the fish flakes easily and is fully cooked.

Check the Fish

  • Check the thickest part of the fish with a food thermometer. Fish should reach 145°F for safe eating. The flesh should also look opaque and separate easily with a fork.

Rest and Serve

  • Transfer the grilled mahi-mahi to a serving plate. Let it rest for two minutes before serving. Sprinkle fresh parsley over the top and add lemon wedges for extra brightness.
