Ingredients
  

  • 4 whole branzino fish about 1 lb each, cleaned and gutted.
  • 2 lemons juice and zest from both.
  • 1/4 cup olive oil.
  • 4 garlic cloves minced.
  • 2 tbsp fresh parsley chopped.
  • 2 tbsp fresh dill chopped.
  • 1 tsp salt.
  • 1/2 tsp black pepper.
  • 1 lemon sliced for garnish.

Instructions
 

Prepare the Marinade

  • Mix olive oil, lemon juice, zest, garlic, parsley, dill, salt, and pepper in a bowl. Stir well for bright flavors.

Score the Fish

  • Pat fish dry. Make 3 shallow cuts on each side. This lets flavors soak deep inside.

Marinate the Branzino

  • Rub marinade all over fish, inside cuts and cavity. Let sit 10 minutes. Or chill up to 1 hour.

Preheat the Grill

  • Heat grill to medium-high (about 400°F). Oil grates lightly. Avoid sticking issues.

Grill the Fish

  • Place fish on grill. Cook 4-5 minutes per side. Skin gets crispy. Flesh turns flaky white.

Check for Doneness

  • Fish is ready at 145°F inside. Or poke gently—meat flakes easily. Don't overcook.

Rest and Serve

  • Remove from grill. Let rest 2 minutes. Squeeze fresh lemon. Garnish with slices.
