Ingredients

  • 4 cups plain full-fat yogurt
  • 1 tablespoon honey optional
  • ½ teaspoon vanilla extract optional
  • Fresh berries for serving, optional

Instructions

Prepare the Strainer

  • Place a fine-mesh strainer over a large bowl. Line the strainer with clean cheesecloth or muslin. Make sure the cloth covers the bottom and sides completely.

Add the Yogurt

  • Spoon the plain yogurt into the lined strainer. Spread it gently with a spoon. Keep the yogurt in an even layer for better straining.

Cover the Yogurt

  • Fold the cloth gently over the yogurt. Cover the bowl with a lid or clean kitchen wrap. This keeps the yogurt fresh while it drains.

Start Straining

  • Place the covered bowl inside the refrigerator. Let the yogurt strain for four hours. For a much thicker texture, leave it for six to eight hours.

Check the Texture

  • Open the cloth and check the yogurt. It should look thick, creamy, and smooth. If you prefer thicker Greek yogurt, continue straining for another hour.

Transfer and Mix

  • Spoon the strained yogurt into a clean airtight container. Stir gently until smooth. Add vanilla or honey if you want a lightly sweet flavor.

Serve and Enjoy

  • Serve the Greek yogurt chilled with berries, sliced banana, nuts or granola. You can also use it in savory dips, sauces and creamy dressings.

Notes

  • Use plain, unsweetened yogurt for the best results.
  • Full-fat yogurt creates a richer and creamier texture.
  • Strain longer when you want very thick Greek yogurt.
  • Always strain yogurt in the refrigerator for food safety.
  • Do not throw away the liquid collected underneath. It can be added to smoothies or baking.
  • Add honey and vanilla for a simple sweet version.
  • Stir in cinnamon for a warm and comforting flavor.
  • Add chopped cucumber, garlic, and herbs for a fresh savory dip.
  • Use low-fat yogurt if you prefer a lighter option.
  • Add fresh berries just before serving for the best texture.
