  • 2 cups cooked quinoa or brown rice
  • 450 grams white fish fillets
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • ½ cup cherry tomatoes halved
  • ½ cup cucumber diced
  • ¼ cup red onion finely sliced
  • 1 avocado diced
  • ¼ cup fresh cilantro chopped
  • 2 tablespoons pumpkin seeds
  • 1 lime juiced
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon honey
  • 1 teaspoon lime juice
  • ¼ teaspoon chili powder

Instructions
 

Prepare the Grain Base

  • Cook quinoa or brown rice according to the package directions. Let it cool slightly before using. Fluff the grains gently with a fork. This keeps them light and prevents the salad from becoming heavy or sticky.

Season the Fish

  • Pat the fish fillets dry using paper towels. Mix paprika, cumin, garlic powder, salt and black pepper in a small bowl. Rub the seasoning evenly over both sides of each fish fillet.

Cook the Fish

  • Heat olive oil in a large skillet over medium heat. Add the seasoned fish carefully. Cook for four to five minutes per side. The fish should become flaky, opaque and lightly golden.

Make the Grain Salad Topper

  • Place cooked grains in a large bowl. Add cabbage, tomatoes, cucumber, red onion, cilantro and pumpkin seeds. Pour over lime juice. Toss gently until everything is evenly mixed and fresh.

Prepare the Creamy Lime Sauce

  • Combine Greek yogurt, mayonnaise, honey, lime juice and chili powder. Stir until smooth and creamy. Taste the sauce and adjust the lime or chili according to your preference. Keep it chilled until serving.

Warm the Tortillas

  • Heat a clean skillet over medium heat. Warm each tortilla for about 20 seconds per side. Keep the warmed tortillas covered with a clean kitchen towel. This helps them stay soft and flexible.

Assemble the Tacos

  • Place a spoonful of the grain salad mixture inside each warm tortilla. Add flakes of cooked fish and diced avocado. Drizzle the creamy lime sauce over everything. Finish with fresh cilantro and extra lime juice.

Serve and Enjoy

  • Arrange the tacos on a serving plate with extra grain salad beside them. Add more lime wedges for freshness. Serve immediately while the fish is warm and the vegetables remain crisp.
