Ingredients

  • 1 unbaked 9-inch deep-dish pie crust
  • 3 large eggs room temperature
  • 1 cup granulated white sugar
  • 1 cup dark corn syrup
  • 4 tablespoons unsalted butter melted and cooled
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh pecan halves the fresher, the better
  • 1 tablespoon bourbon optional, for extra depth

Instructions

Preheat the Oven

  • Set your oven to 175°C (350°F). Make sure your oven rack is in the center position for even baking.

Prepare the Crust

  • Roll out your pie dough and press it gently into the deep-dish pie plate. Crimp the edges with your fingers to make a pretty pattern.

Whisk the Eggs

  • In your large mixing bowl, beat the three eggs until they are light and slightly foamy. This helps the filling stay smooth and airy.

Mix the Sugars

  • Add the granulated sugar, dark corn syrup, and salt to the beaten eggs. Whisk everything together until the mixture is dark and well combined.

Add Butter and Vanilla

  • Slowly pour in the melted butter and the vanilla extract. If you are using bourbon, stir it in now to add a lovely smoky flavor.

Layer the Pecans

  • Spread the fresh pecan halves evenly across the bottom of the unbaked pie crust. Using whole halves makes the pie look very professional and rustic.

Pour the Filling

  • Carefully pour the liquid sugar mixture over the pecans. The nuts will naturally float to the top and create a beautiful, crunchy layer.

Bake the Pie

  • Place the pie in the oven and bake for 50 to 55 minutes. The filling should be set but still have a slight jiggle.

Check the Edges

  • If the crust begins to brown too quickly, cover the edges with a strip of foil. This keeps the pastry from burning while the center finishes.

Cool Completely

  • Remove the pie and place it on a wire rack. Let it cool for at least four hours so the filling can set properly.

Notes

  • Always use fresh pecans because old nuts can taste bitter or oily.
  • Toast the pecans in a pan for 5 minutes before adding them for extra crunch.
  • Use light corn syrup if you prefer a milder and lighter caramel flavor.
  • Add a half cup of dark chocolate chips for a "Texas Mud" style pie.
  • Ensure your eggs are at room temperature so they mix perfectly with the syrup.
  • Brush the crust with an egg wash for a shiny, golden-brown finish.
