Ingredients

  • 1 cup plain flour
  • 4 large eggs
  • 1 cup whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons melted butter
  • 3 tablespoons vegetable oil
  • 2 cups beef stock
  • 2 tablespoons butter
  • 2 tablespoons plain flour
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

Make the Batter

  • Add flour, salt and pepper to a large bowl. Make a small well in the center. Add the eggs and milk gradually. Whisk until the batter becomes smooth and slightly thin.

Rest the Batter

  • Let the batter rest for at least 15 minutes. This helps the flour absorb the liquid. A rested batter can give your Yorkshire pudding popovers a lighter texture.

Heat the Oven

  • Preheat your oven to 425°F (220°C). Place the muffin tin inside while the oven heats. The pan must become very hot before adding the batter.

Heat the Oil

  • Carefully remove the hot muffin tin. Add a small amount of vegetable oil to each cup. Return the tin to the oven for about two minutes.

Add the Batter

  • Remove the hot tin carefully. Quickly pour the batter into each cup. Fill each section about halfway. Work quickly so the oil stays hot.

Bake the Popovers

  • Place the muffin tin back into the oven. Bake for 20 to 25 minutes. Do not open the oven door during baking, or the popovers may lose their height.

Make the Gravy

  • Melt butter in a saucepan over medium heat. Stir in the flour and cook briefly. Slowly whisk in the beef stock. Add Worcestershire sauce, onion powder and garlic powder.

Simmer Until Thick

  • Continue whisking the gravy as it gently simmers. Cook for several minutes until smooth and thick. Taste carefully and add salt and pepper as needed.

Serve With Rich Gravy

  • Remove the golden popovers from the oven. Serve them immediately while they are crisp and hot. Spoon plenty of rich gravy over each popover before serving.

Notes

  • Always preheat the muffin tin before adding the batter.
  • Use room-temperature eggs and milk for smoother batter.
  • Never overcrowd the muffin cups with batter.
  • Keep the oven door closed while the popovers bake.
  • Serve immediately for the best crisp texture.
  • Add fresh thyme to the gravy for extra flavor.
  • Use chicken stock for a lighter gravy.
  • Add a little grated cheddar for a cheesy variation.
  • Replace vegetable oil with beef drippings for deeper flavor.
  • Add roasted garlic to the gravy for a richer taste.
