  • 1½ pounds boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 tablespoon olive oil
  • 1 small yellow onion diced

  • 1 can mild diced green chiles 4 ounces
  • 2 cups low-sodium chicken broth
  • 1 cup shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup frozen corn
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice

Prepare the Chicken

  • Pat the chicken dry with paper towels. Cut it into small, even pieces. Season with cumin, paprika, salt, and black pepper. Even pieces cook evenly and make serving easier for the whole family.

Brown the Chicken

  • Heat olive oil in a large deep skillet over medium heat. Add the chicken pieces and cook until lightly browned. The chicken does not need to cook completely yet because it will finish later.

Cook the Onion and Garlic

  • Add diced onion to the same skillet. Cook for three minutes until softened. Stir in minced garlic and cook for another thirty seconds. Keep stirring gently to prevent the garlic from burning.

Add the Rice

  • Add the uncooked rice to the skillet. Stir it with the chicken and vegetables for about one minute. This lightly coats the rice and helps bring the flavors together.

Add Green Chiles and Broth

  • Stir in the green chiles, frozen corn, and chicken broth. Scrape the bottom of the skillet gently. Bring everything to a gentle simmer before reducing the heat.

Cook the Rice

  • Cover the skillet with a lid and reduce the heat to low. Cook for about 18 minutes. Avoid lifting the lid too often because escaping steam can affect the rice.

Check the Chicken and Rice

  • After cooking, check that the rice is tender and the chicken is fully cooked. The chicken should reach 165°F internally. If needed, cook for several more minutes.

Add the Creamy Ingredients

  • Turn the heat to low. Stir in sour cream and lime juice until evenly combined. The mixture should become creamy without boiling. Avoid high heat after adding the sour cream.

Add the Cheese

  • Sprinkle Monterey Jack and cheddar cheese over the chicken and rice. Cover the skillet for two to three minutes. Let the cheese melt completely and become soft and creamy.

Garnish and Serve
