Ingredients
  

  • For the Falafel Patties
  • cups cooked chickpeas drained
  • ½ small onion chopped
  • 2 garlic cloves
  • ½ cup fresh parsley
  • 2 tablespoons fresh cilantro
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons flour
  • ½ teaspoon baking powder
  • 2 tablespoons olive oil1 pound sirloin steak

  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper2 cups cooked rice
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes halved
  • ½ cup shredded lettuce
  • ¼ cup thinly sliced red onion
  • ¼ cup crumbled feta cheese
  • 2 tablespoons chopped parsley½ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 small garlic clove grated
  • 1 tablespoon chopped parsley
  • ¼ teaspoon salt

Instructions
 

Prepare the Falafel Mixture

  • Add chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt and pepper. Pulse until crumbly but not completely smooth. Add flour and baking powder. Pulse again until the mixture holds together.

Shape the Falafel Patties

  • Divide the mixture into eight equal portions. Shape each portion into a small and firm patty. Keep the patties slightly thick for a soft center. Place them on a plate while preparing the steak.

Marinate the Steak

  • Mix harissa, olive oil, lemon juice, cumin, paprika, salt and pepper. Coat the steak well with this mixture. Let it rest for 10 minutes. This short rest gives the meat wonderful flavor.

Cook the Falafel Patties

  • Heat olive oil in a large skillet over medium heat. Cook the patties for about four minutes per side. Turn them gently when golden brown. Remove them when crisp outside and tender inside.

Cook the Harissa Steak

  • Heat the same skillet over medium-high heat. Add the steak and cook until your preferred doneness. Let it rest for five minutes. Slice the steak thinly against the grain before assembling.

Make the Yogurt Sauce

  • Combine Greek yogurt, lemon juice, garlic, parsley and salt in a small bowl. Stir until smooth and creamy. Taste the sauce and add more lemon juice if you prefer a brighter flavor.

Prepare the Bowl Ingredients

  • Warm the cooked rice if needed. Arrange cucumber, tomatoes, lettuce, red onion and feta nearby. Keeping everything ready makes assembly much easier. This also helps create colorful and balanced bowls.

Assemble the Bowls

  • Add warm rice to four serving bowls. Arrange sliced steak and falafel patties over the rice. Add fresh vegetables and feta. Drizzle with yogurt sauce, then sprinkle with parsley before serving.

Notes

  • Use canned chickpeas for convenience, but drain them very well.
  • Do not over-process the falafel mixture.
