Ingredients
  

  • 500 g tough beef or mutton
  • 2 tablespoons oil
  • 1 cup onion sliced
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 2 tablespoons yogurt
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 cups water or broth
  • 1 tablespoon lemon juice or vinegar

Instructions
 

Prepare the Meat

  • Wash the meat well with clean water. Cut it into medium pieces. Try to keep all pieces equal size. This helps them cook evenly. Pat dry with a clean towel. This step improves texture and flavor during cooking.

Marinate for Tenderness

  • Place meat in a bowl. Add yogurt, lemon juice, ginger, and garlic. Mix everything well. Let it rest for at least 30 minutes. This helps break down tough fibers. Longer marination gives even better results.

Heat the Oil

  • Take a heavy pot and add oil. Heat it on medium flame. Once hot, add sliced onions. Cook until golden brown. This adds sweetness and depth to the dish. Stir often to avoid burning.

Add the Meat

  • Now add marinated meat into the pot. Stir well so it mixes with onions. Cook for 5–7 minutes. This step seals the juices inside. It also builds strong flavor in the dish.

Add Spices and Liquid

  • Add salt, pepper and paprika. Mix gently. Pour in water or broth. Stir once more. The liquid should cover most of the meat. This helps it cook slowly and become soft.

Slow Cook for Tender Meat

  • Cover the pot with a lid. Cook on low heat for 60–90 minutes. Stir occasionally. The slow cooking process breaks down tough fibers. This makes the meat very soft and juicy.

Check and Finish

  • Check the meat with a fork. If it breaks easily, it is ready. If not, cook a little longer. Adjust salt if needed. Turn off heat and let it rest for 5 minutes before serving.
