Ingredients

  • 2 cups all-purpose flour plus extra for dusting
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons cold unsalted butter cubed
  • 1 cup cold buttermilk
  • 2 tablespoons melted butter for brushing
  • Optional: 1 tablespoon sugar for slight sweetness

Instructions

Preheat and Prep Oven

  • Heat oven to 450°F (230°C). Line baking sheet with parchment. Cold oven works too. Ensures even rise. Takes 2 minutes.

Mix Dry Ingredients

  • Whisk flour, baking powder, baking soda, salt in large bowl. Add sugar if using. Creates perfect lift. No lumps allowed.

Cut in Cold Butter

  • Add cold butter cubes to flour mix. Use pastry cutter or fingers. Work fast until pea-sized crumbs form. Butter stays cold. Key for flaky layers.

Add Buttermilk

  • Pour cold buttermilk into flour mixture. Stir gently with fork. Just until dough comes together. Shaggy is perfect. Don't overmix.

Shape the Dough

  • Turn dough onto floured surface. Gently pat to 1-inch thick. Fold dough 3 times like letter. Pat again to ¾-inch thick. Creates layers.

Cut Biscuits

  • Use biscuit cutter. Press straight down—no twisting. Place on baking sheet 1 inch apart. Gather scraps gently. Cut more biscuits.

Bake to Golden Perfection

  • Brush tops with melted butter. Bake 10-12 minutes. Golden brown tops. Remove immediately. Brush again with butter. Serve warm!

Notes

  • Keep butter and buttermilk ice-cold. Creates steam for flaky layers.
  • Don't twist cutter. Seals edges, stops rising. Press straight down.
  • Sweet version: Add 2 tbsp honey to dough. Glaze with butter-sugar mix.
  • Cheese biscuits: Mix ½ cup shredded cheddar into flour. Sprinkle extra top.
  • Herb lovers: Add 2 tbsp chopped chives or rosemary. Holiday flavors pop.
  • High altitude? Add 1 extra tbsp flour. Bake 1 minute longer.
