Ingredients

  • 1.5 lbs pork jowl sliced into ½-inch thick pieces.
  • 6 garlic cloves minced finely.
  • 2 tablespoons soy sauce low-sodium if you like.
  • 1 tablespoon oyster sauce.
  • 1 teaspoon sugar.
  • ½ teaspoon black pepper.
  • 2 tablespoons vegetable oil.
  • 1 tablespoon rice vinegar.
  • Fresh green onions chopped (for garnish).
  • Optional: Red chili flakes for heat.

Instructions

Marinate the Pork Jowl

  • Slice pork jowl into even ½-inch pieces. Mix garlic, soy sauce, oyster sauce and sugar and pepper and rice vinegar in a bowl. Add pork slices. Toss well to coat. Let it sit for 10 minutes. This step builds deep flavor.

Heat the Pan

  • Place frying pan on medium-high heat. Add vegetable oil. Wait until oil shimmers and is hot. Test with a drop of water—it should sizzle. This ensures crispy results every time.

Fry the Pork Jowl

  • Lay pork slices in the hot pan. Don't crowd them. Cook for 4-5 minutes per side. Flip with tongs when edges turn golden. Fat will crisp up nicely. Listen for that satisfying crackle.

Add Garlic Boost

  • In the last 2 minutes, sprinkle extra minced garlic over the pork. Stir gently. Cook until garlic turns golden brown. Avoid burning—it turns bitter fast. Smell that aroma? Heaven.

Drain and Rest

  • Remove pork to paper towels. Let excess oil drain off. Rest for 2 minutes. This keeps it juicy inside and crispy outside. Taste one slice—pure bliss.

Garnish and Serve

  • Sprinkle chopped green onions on top. Add chili flakes if you want spice. Serve hot right away. Your kitchen smells like a pro restaurant now.

Notes

  • Pat pork jowl dry before marinating for extra crispiness.
  • Use medium-high heat—too low makes it greasy.
  • Double garlic for garlic lovers; it's the star here.
  • Variation: Add ginger slices in marinade for zing.
  • Make it spicy: Mix in sriracha with soy sauce.
  • Air fryer option: Cook at 400°F for 15 minutes, flip halfway.
  • Grill version: BBQ slices for smoky flavor in summer.
  • Serve with rice to soak up juices.
