Ingredients
  

  • 6 large free-range eggs at room temperature
  • 1 medium ripe avocado peeled and pitted
  • 1 tablespoon fresh lime juice to prevent browning
  • 1 teaspoon Dijon mustard for a little tang
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh cilantro finely chopped

Instructions
 

Boil the Eggs

  • Place your eggs in a large saucepan and cover them with cold water. Bring the water to a boil, then remove from heat and let sit for 10 minutes.

Cool in Ice

  • Transfer the hot eggs immediately into a bowl of very cold ice water. Let them sit for five minutes so they are easy for you to peel neatly.

Peel and Slice

  • Gently crack the eggshells and peel them off under a bit of running water. Use a sharp knife to slice each egg in half lengthwise to create two boats.

Remove the Yolks

  • Carefully scoop out the yellow yolks and place them into your medium mixing bowl. Set the empty white egg halves aside on a clean serving plate or tray.

Mash the Avocado
