Ingredients

  • 16 ounces cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • ½ cup dried cranberries chopped
  • ½ cup pecans finely chopped
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh chives chopped
  • 1 tablespoon honey
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ½ cup extra chopped pecans for coating
  • ¼ cup extra dried cranberries for coating
  • 2 tablespoons fresh parsley for coating

Instructions

Soften the Cream Cheese

  • Remove the cream cheese from the refrigerator about 30 minutes before starting. Let it soften naturally at room temperature. Soft cream cheese mixes more easily and creates a smooth cheese ball.

Toast the Pecans

  • Place the pecans in a dry skillet over medium-low heat. Toast them for three to five minutes. Stir often until fragrant. Remove them from the skillet and let them cool completely.

Prepare the Cranberries

  • Chop the dried cranberries into small pieces. Smaller pieces spread more evenly throughout the cheese mixture. Reserve a few whole pieces for the outer coating.

Mix the Cheese

  • Add softened cream cheese and shredded cheddar to a large bowl. Beat them together until smooth and creamy. A hand mixer makes this step quick and easy.

Add the Flavorings

  • Add chopped cranberries, pecans, parsley, chives, honey, garlic powder, salt and black pepper. Stir everything gently until the ingredients are evenly distributed.

Shape the Cheese Ball

  • Place the cheese mixture onto a large piece of plastic wrap. Gather the mixture together and shape it into a round ball. Press gently to create a firm, even shape.

Chill the Cheese Ball

  • Wrap the cheese ball tightly with plastic wrap. Place it in the refrigerator for at least one hour. Chilling helps the cheese become firmer and makes coating easier.

Prepare the Coating

  • Combine the extra chopped pecans, dried cranberries, and fresh parsley on a shallow plate. Mix them gently so the colors and textures are evenly distributed.

Coat the Cheese Ball

  • Remove the chilled cheese ball from its plastic wrap. Roll it gently through the pecan and cranberry mixture. Press lightly so the coating sticks to every side.

Serve the Cheese Ball

  • Transfer the finished cheese ball to a serving platter. Place crackers, toasted bread, or fresh vegetables around it. Let it sit for a few minutes before serving.
