Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 tablespoons unsalted butter
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped fresh chives
  • 4 slices cooked bacon crumbled
  • ¼ teaspoon garlic powder

Instructions

Prepare the Potatoes

  • Preheat your oven to 425°F. Wash the potatoes thoroughly under cool running water. Scrub away any dirt from the skins. Pat them completely dry with a clean towel before seasoning.

Pierce the Potato Skins

  • Use a fork to pierce each potato several times. Make holes around different areas of each potato. These holes allow steam to escape during baking and help the potatoes cook evenly.

Season the Potatoes

  • Place the potatoes on a baking sheet. Brush each potato with olive oil. Sprinkle salt, black pepper and garlic powder over the skins. Rub gently to spread the seasoning evenly.

Bake Until Tender

  • Place the baking sheet inside the preheated oven. Bake the potatoes for about 50 to 55 minutes. Larger potatoes may need extra time. The skins should become crisp and lightly browned.

Test for Doneness

  • Carefully check each potato with a small knife. The knife should enter the center easily. If the potato still feels firm, bake it for another five to ten minutes.

Open the Potatoes

  • Remove the potatoes from the oven using oven mitts. Let them rest for two minutes. Cut a deep slit lengthwise across each potato. Gently press the sides to open them.

Add Butter and Fluff

  • Add one tablespoon of butter inside each potato. Use a fork to gently fluff the soft potato center. The heat will melt the butter and spread its rich flavor throughout.

Add the Classic Toppings

  • Spoon sour cream over each potato. Add shredded cheddar, crispy bacon and fresh chives. Serve immediately while the potato remains hot. The melted cheese and cool sour cream create delicious contrast.

Notes

  • Choose large russet potatoes for a fluffy center.
  • Dry potatoes completely before adding oil.
  • Pierce each potato before baking.
  • Do not wrap potatoes in foil.
  • Foil can prevent the skins from becoming crisp.
  • Use freshly shredded cheddar for better melting.
  • Add Greek yogurt instead of sour cream.
  • Try Monterey Jack for a milder cheese flavor.
  • Add steamed broccoli for extra vegetables.
  • Top with chili for a hearty meal.
  • Use green onions instead of chives.
  • Add shredded chicken for extra protein.
