- 1 bunch curly kale about 8 cups, stems removed, chopped
- 1 large Honeycrisp apple thinly sliced
- 1 cup fresh blueberries
- 1/2 cup roasted pecans chopped
- 1/2 cup dried cranberries
- 1/2 cup shredded carrots
- 1/4 cup apple cider vinegar
- 3 tbsp olive oil
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 garlic clove minced
- Salt and black pepper to taste
- 1 tsp fresh lemon juice
- 1/4 cup crumbled feta cheese optional for extra creaminess
Mix the Salad Base
In a large bowl, add chopped kale. Top with apple slices, blueberries, pecans, cranberries, carrots, and feta. Do not toss yet. Keeps it pretty.
