Ingredients
  

  • 1 bunch curly kale about 8 cups, stems removed, chopped
  • 1 large Honeycrisp apple thinly sliced
  • 1 cup fresh blueberries
  • 1/2 cup roasted pecans chopped
  • 1/2 cup dried cranberries
  • 1/2 cup shredded carrots
  • 1/4 cup apple cider vinegar
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 garlic clove minced
  • Salt and black pepper to taste
  • 1 tsp fresh lemon juice
  • 1/4 cup crumbled feta cheese optional for extra creaminess

Instructions
 

Prep the Kale

  • Remove tough stems from kale. Chop leaves into bite-sized pieces. Wash well and dry with a towel. Massage kale with a pinch of salt for 2 minutes. It softens and tastes better.

Slice the Apple

  • Core the apple. Slice it super thin. Toss slices in a bit of lemon juice. This stops browning. Adds crisp crunch to your salad.

Mix the Salad Base

  • In a large bowl, add chopped kale. Top with apple slices, blueberries, pecans, cranberries, carrots, and feta. Do not toss yet. Keeps it pretty.

Make the Dressing
