Ingredients
  

  • 14 oz maraschino cherries drained, chopped
  • 14 oz powdered sugar 4 cups
  • 1/4 cup unsalted butter softened
  • 2 tbsp maraschino cherry juice
  • 1 tsp almond extract
  • 12 oz chocolate almond bark
  • 1/2 cup peanut butter creamy
  • 1 cup chopped cocktail peanuts

Instructions
 

Drain the Cherries

  • Open jar. Drain cherries in colander. Pat dry with paper towels. Chop finely. Let sit 30 minutes.

Mix the Cherry Base

  • Cream butter in bowl. Add powdered sugar gradually. Mix until crumbly dough forms. Add cherry juice and extract.

Fold in Cherries

  • Add chopped cherries. Stir gently until combined. Dough gets pink and sticky. Don't overmix.

Form Truffle Balls

  • Scoop 1 tsp portions. Roll into smooth balls. Place on parchment sheet. Freeze 45 minutes until firm.

Melt Chocolate Coating

  • Break almond bark into microwave bowl. Add peanut butter. Microwave 20 seconds. Stir. Repeat until smooth.

Dip Frozen Balls

  • Use fork to dip balls in chocolate. Let excess drip off. Place back on parchment. Work quickly.

Add Peanut Crunch

  • Sprinkle chopped peanuts on wet chocolate. Press lightly. Refrigerate 1 hour until set completely.
