  • Water – ¾ cup
  • Cherry blossom extract – ½ teaspoon
  • Pink food coloring – 1 drop optional
  • Cornstarch – ½ cup for dusting
  • Sweet red bean paste – ½ cup

Instructions
 

Prepare the Filling

  • Divide the red bean paste into small, equal balls and place them on parchment paper. Set them aside to rest while preparing the dough.

Mix the Mochi Batter

  • Combine glutinous rice flour and sugar in a mixing bowl. Add water slowly and whisk until the mixture becomes smooth and lump-free.

Add Flavor and Color

  • Gently stir in the cherry blossom extract to spread the flavor evenly. Add a tiny drop of pink food coloring if desired.

Cook the Mochi Dough

  • Microwave the mixture for one minute, then stir well. Microwave again for another minute until thick and sticky.

Check Dough Texture

  • The dough should look glossy and stretchy. If needed, microwave for thirty more seconds and stir again.

Prepare Work Surface

  • Dust your clean work surface generously with cornstarch. This step prevents the dough from sticking.

Shape the Mochi

  • Carefully place the dough onto the prepared surface. Cut it into equal portions using a spatula.

Fill the Mochi

  • Flatten one portion gently with your fingers. Place one ball of red bean paste in the center.

Seal and Finish

  • Pinch the edges together to seal the filling inside. Lightly dust and roll into smooth, round shapes.

Proper storage helps keep mochi soft and enjoyable. Store the mochi in an airtight container and keep it at room temperature for up to one day.
