  • ½ cup chopped walnuts
  • 8 ounces cream cheese softened
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup rolled oats
  • 3 tablespoons cold butter
  • ½ teaspoon cinnamon
  • Pinch of salt

Instructions
 

Prepare the Baking Dish

  • Preheat your oven to 350°F. Grease a 9x13-inch baking dish with butter. You can also line the bottom with parchment paper for easier serving after the cobbler cools.

Prepare the Carrots

  • Wash and peel the carrots before grating them. Use the medium side of a box grater. Gently squeeze out excess moisture if the carrots are especially wet.

Mix the Dry Ingredients

  • Add flour, cinnamon, nutmeg, baking powder, baking soda, and salt to a bowl. Whisk everything together until evenly combined. This helps distribute the spices and leavening ingredients throughout the cake batter.

Mix the Wet Ingredients

  • Combine flour, brown sugar, oats, cinnamon, and salt in a small bowl. Cut in cold butter using your fingers or a pastry cutter until crumbly.

Add the Topping and Bake

  • Sprinkle the crumb topping evenly over the carrot cake batter. Bake for about 40 to 45 minutes. The edges should look set, while the center should remain slightly soft.

Cool and Serve

  • Remove the cobbler from the oven and let it cool for at least 15 minutes. This helps the cheesecake center set slightly. Serve warm with whipped cream or vanilla ice cream.
