Prep the Cucumbers

  • Wash cucumbers well. Chop into big chunks. No need to peel—they add nice green color. Toss into blender. Blend on high for 1 minute until smooth. This takes 2 minutes total. Smooth puree is key for silky texture.

Add Mint and Blend Again

Strain the Mixture
