Ingredients

  • 8 cups mixed salad greens
  • 6 slices bacon
  • 1 large apple thinly sliced
  • ½ cup dried cranberries
  • ½ cup toasted pecans
  • ½ cup crumbled feta cheese
  • ¼ cup thinly sliced red onion
  • ½ cup sliced strawberries
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons bacon drippings
  • ¼ cup apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 small garlic clove minced
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 tablespoons finely chopped red onion

Instructions

Prepare the Salad Greens

  • Wash the salad greens well and dry them completely. Excess water can weaken the dressing. Place the greens in a large serving bowl. Keep them chilled while you prepare the remaining ingredients.

Cook the Bacon

  • Heat a large skillet over medium heat. Add the bacon and cook until crisp on both sides. Transfer the bacon to a paper towel-lined plate. Keep about three tablespoons of bacon drippings in the skillet.

Prepare the Salad Ingredients

  • While the bacon cools, slice the apple and strawberries. Crumble the bacon into small pieces. Add the fruit, cranberries, pecans, feta, red onion, and parsley to the salad greens.

Make the Warm Dressing

  • Place the bacon drippings over medium-low heat. Add the chopped red onion and garlic. Cook for about two minutes until fragrant. Stir in apple cider vinegar, honey, Dijon mustard, salt, and black pepper.

Warm the Dressing

  • Whisk the dressing continuously while it heats gently. Do not let it boil heavily. Warm it for two to three minutes until everything is well combined and slightly thickened.

Add the Bacon

  • Crumble the cooked bacon into the warm dressing. Stir gently so the bacon becomes coated with the flavorful mixture. This also allows the smoky bacon flavor to spread throughout the dressing.

Dress the Salad

  • Pour the warm bacon dressing over the salad just before serving. Use salad tongs to gently toss everything together. Toss carefully so the fruit and cheese remain intact.

Taste and Adjust

  • Taste a small bite before serving. Add a little more honey for sweetness or vinegar for extra brightness. Sprinkle additional pecans or feta over the top if desired.

Serve Immediately

  • Serve the salad while the dressing is still warm. The warm dressing lightly softens the greens without making them completely wilted. This creates a lovely contrast between fresh and warm ingredients.

Notes

  • Dry the greens thoroughly before dressing.
  • Use thick-cut bacon for stronger flavor.
  • Save enough bacon drippings for the dressing.
  • Do not overheat the vinegar mixture.
  • Add the dressing immediately before serving.
  • Use spinach instead of mixed greens.
  • Try pears instead of apples.
  • Use walnuts instead of pecans.
  • Goat cheese can replace feta.
  • Add grilled chicken for a complete meal.
  • Use maple syrup instead of honey.
  • Add sliced avocado for extra creaminess.
  • Sprinkle sunflower seeds for additional crunch.
