Ingredients

  • 1 large head cauliflower cut into florets
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

Boil the Cauliflower

  • Bring a large pot of water to a boil and add your cauliflower florets. Cook for about eight minutes until they are soft and tender, then drain the water very thoroughly today.

Mash the Mixture

  • Place your cooked cauliflower in a large bowl and mash it well with a potato masher. Remove any extra liquid with a clean kitchen towel to ensure your tots hold their shape perfectly tonight.

Add Ingredients

  • Stir in your shredded cheese, breadcrumbs, egg, garlic powder, onion powder, salt and black pepper. Mix everything together until you have a thick, consistent, and beautiful dough ready for shaping right now.

Shape the Tots

  • Take a small amount of the cauliflower mixture and shape it into small, uniform cylinders with your hands. Place each tot onto a parchment-lined baking sheet, leaving a little space between them today.

Bake to Perfection

  • Bake your tots at 200°C for twenty-five minutes until they are golden brown and crispy. Flip them halfway through the baking time to get that beautiful, even color on every single side tonight.

Notes

  • Squeeze the moisture out of the mashed cauliflower very well so your tots do not turn soggy.
  • Use almond flour instead of breadcrumbs if you want a gluten-free and lower-carb version of these tots.
  • Add some chopped fresh chives or parsley to the dough for a bright, vibrant, and delicious herbal flavor.
  • Sprinkle a little extra parmesan cheese on top during the last five minutes for a savory, crispy crust — if you love that kind of thin, crunchy, salty parmesan finish, you will also want to try these wafer-thin, oven-baked parmesan crisps that make a perfect crunchy snack on their own.
  • If you have an air fryer, you can cook these at 190°C for fifteen minutes for extra, amazing crunch.
  • Serve them with a spicy sriracha mayo dipping sauce for an exciting and modern flavor twist tonight.
