Ingredients

  • 1 can Rotel tomatoes drained
  • 1 packet ranch seasoning mix
  • 1 cup sour cream
  • 8 oz cream cheese softened
  • 2 cups shredded cheddar cheese
  • 1 cup mayonnaise
  • 1 jalapeño finely chopped
  • 2 green onions sliced
  • 1 cup sweet corn kernels
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • Tortilla chips for serving

Instructions

Prepare the Cream Cheese Base

  • Place softened cream cheese into a large bowl. Add sour cream and mayonnaise. Mix until smooth and creamy. Make sure there are no lumps left. This creates the rich and soft texture for the dip.

Add the Flavor Ingredients

  • Pour in the ranch seasoning mix. Add garlic powder and black pepper. Stir everything slowly. The seasoning gives the dip its bold and tangy flavor. Mix well so every bite tastes delicious.

Mix in the Vegetables

  • Add drained Rotel tomatoes, chopped jalapeño, green onions and corn. Stir carefully to combine. The vegetables add freshness, crunch and color. The Rotel also gives the dip a slightly spicy taste.

Add the Cheese

  • Fold shredded cheddar cheese into the bowl. Stir gently until fully mixed. The cheese makes the dip extra creamy and rich. Save a little cheese for topping if desired.

Chill the Dip

  • Cover the bowl with plastic wrap. Place it inside the refrigerator for at least one hour. Chilling helps the flavors blend together beautifully. The dip tastes much better after resting.

Serve and Enjoy

  • Transfer the dip into a serving bowl. Sprinkle extra green onions or cheese on top. Serve with tortilla chips, crackers, or fresh vegetables. Enjoy this creamy and flavorful appetizer with family and friends.

Notes

  • Drain Rotel tomatoes well to avoid watery dip
  • Use spicy Rotel for extra heat
  • Add cooked bacon for smoky flavor
  • Mix pepper jack cheese for more spice
  • Chill longer for deeper flavor
  • Use Greek yogurt instead of sour cream
  • Add black beans for extra texture
  • Serve cold for the best taste
