Ingredients

  • 8 slices thick-cut bacon
  • 8 slices sandwich bread or Texas toast
  • 4 large eggs
  • 4 slices cheddar cheese
  • 4 slices American cheese
  • 2 medium ripe tomatoes
  • 4 large lettuce leaves
  • 2 tablespoons mayonnaise
  • 1 tablespoon softened butter
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon cream cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon chopped green onions
  • 1 teaspoon maple syrup

Instructions

Cook the Bacon

  • Place the bacon in a large skillet over medium heat. Cook until deeply golden and crisp. Turn each slice several times for even browning. Transfer the bacon to paper towels and let the extra grease drain.

Prepare the Sweet Cheese Spread

  • Add softened cream cheese, honey, maple syrup and Dijon mustard to a small bowl. Stir until completely smooth. Add a little black pepper for balance. This creamy spread gives the sandwich its gentle Southern-style sweetness.

Prepare the Tomatoes and Lettuce

  • Wash and dry the tomatoes and lettuce carefully. Slice the tomatoes into medium-thick rounds. Keep the lettuce leaves whole. Pat the tomatoes gently with paper towels to remove extra moisture before assembling the sandwiches.

Toast the Bread

  • Spread softened butter lightly over one side of each bread slice. Toast the bread in a skillet or toaster until golden and crisp. Avoid making it too hard. The bread should stay sturdy while remaining pleasant to bite.

Cook the Eggs

  • Heat a clean nonstick pan over medium-low heat. Crack the eggs into the pan and cook gently. Season with salt and pepper. Cook until the whites are set while the yolks remain slightly soft.

Build the Cheese Stack

  • Place cheddar and American cheese together on warm toast. Add a spoonful of the sweet cheese spread. Let the warmth soften the cheeses slightly. This creates a rich, creamy layer beneath the fresh sandwich toppings.

Assemble the BLT Sandwiches

  • Spread mayonnaise over the second piece of toast. Add lettuce and tomato slices. Place two bacon slices over the vegetables. Carefully add one cooked egg. Finish with the cheesy toast and press gently.

Slice and Serve

  • Cut each sandwich diagonally with a sharp knife. Serve immediately while the bacon and cheese are warm. Keep the sandwich upright when serving. This helps prevent the delicious fillings from sliding out.

Notes

  • Use thick-cut bacon for a meatier bite and better texture.
  • Choose ripe but firm tomatoes to prevent soggy bread.
  • Cook eggs gently for softer centers.
  • Toast the bread lightly for better sandwich structure.
  • Add a pinch of cayenne for gentle Southern heat.
  • Use pepper jack instead of cheddar for extra flavor.
  • Add sliced avocado for a creamy variation.
  • Try brioche for a slightly sweeter sandwich.
  • Use turkey bacon if you prefer a lighter meat option.
  • Add fresh herbs for extra freshness.
