Ingredients
  

  • 1 cup cooked beets pureed until very smooth
  • 3 large eggs at room temperature
  • 1/2 cup melted coconut oil or unsalted butter
  • 1 teaspoon pure vanilla extract
  • 3/4 cup coconut sugar or light brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup almond flour or all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chips at least 70% cocoa
  • 1/2 teaspoon baking powder

Instructions
 

Prepare the Beet Puree

  • Steam or boil fresh beets until they are very soft. Place them in a food processor and blend until no chunks remain. This smooth puree is the secret to a fudgy texture.

Melt the Dark Chocolate

  • Place half of your chocolate chips and the coconut oil in a glass bowl. Melt them together using a microwave or a double boiler. Stir until the mixture is glossy and smooth.

Mix the Wet Ingredients

  • In a large bowl, whisk the eggs and sugar together until light. Stir in the beet puree, vanilla extract, and the melted chocolate mixture. Mix well until the color is deep red.

Combine the Dry Ingredients

  • Sift the cocoa powder, flour, salt, and baking powder into the wet mixture. Use a spatula to fold everything together gently. Stop mixing as soon as you see no dry flour.
