Ingredients
  

  • 8 oz cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 5 slices bacon
  • 2 fresh jalapeños
  • 2 green onions
  • 1 garlic clove minced
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ½ cup breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions
 

Cook the Bacon

  • Place the bacon in a skillet over medium heat. Cook until crisp and golden. Transfer it to a paper towel and let it cool. Crumble the bacon into small pieces once completely cooled.

Prepare the Jalapeños

  • Wash the jalapeños and remove the stems. Remove some seeds for a milder flavor. Finely chop the peppers. Keep more seeds if you enjoy stronger heat in your appetizers.

Prepare the Cheese Mixture

  • Add softened cream cheese, cheddar, and mozzarella to a large bowl. Add chopped jalapeños, green onions, garlic, smoked paprika, pepper, and salt. Stir until everything is evenly combined.

Add the Bacon

  • Add the crispy bacon to the cheese mixture. Fold gently until the bacon is spread throughout. Try to keep some larger bacon pieces for extra texture and flavor.

Chill the Mixture

  • Cover the bowl and refrigerate the mixture for about 20 minutes. Chilling makes the cheese mixture firmer. This makes shaping the cheese balls much easier and less messy.

Shape the Cheese Balls

  • Scoop small portions of the chilled mixture. Roll each portion gently between your palms. Make balls about one inch wide. Keep the sizes similar so they cook evenly on the grill.
