Ingredients
  

  • 1½ pounds boneless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups broccoli florets
  • 1 bell pepper sliced
  • 1 small zucchini sliced
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound baby potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

Prepare the Chicken

  • Pat the chicken dry with paper towels. Add it to a bowl with olive oil and seasonings. Toss everything well until each piece is evenly coated with the spice mixture.

Preheat the Air Fryer

  • Preheat the air fryer to 380°F for about three minutes. Preheating helps the chicken start cooking immediately. It also helps create a more even golden surface.

Cook the Chicken

  • Place the chicken pieces inside the basket without overcrowding. Cook for about 18 to 20 minutes, turning halfway through cooking. Check the thickest piece with a food thermometer before serving.

Prepare the Vegetables

  • Add broccoli, bell pepper, and zucchini to a bowl. Drizzle with olive oil and add the seasonings. Toss gently until the vegetables are lightly coated and ready for cooking.

Air Fry the Vegetables

  • Place the vegetables in the air fryer basket. Cook at 380°F for about 8 to 12 minutes. Shake the basket halfway through cooking for even browning and tender edges.

Prepare the Potatoes

  • Wash the baby potatoes and cut larger ones in half. Toss them with olive oil, paprika, garlic powder, salt, and pepper. Make sure the seasoning coats each potato evenly.

Cook the Potatoes

  • Place the potatoes in the basket in one layer. Cook at 400°F for 15 to 20 minutes. Shake the basket every few minutes until the potatoes become golden and crisp.

Check Everything Carefully

  • Cooking times can vary between air fryer models. Check the food before the suggested time ends. Chicken should reach a safe internal temperature of 165°F before you serve it.

Serve Warm

  • Transfer the cooked food to a serving plate. Let the chicken rest for a few minutes before slicing. Serve with the roasted vegetables and crispy potatoes for a complete meal.
